SMOKY PECAN WHIPPED SWEET POTATOES

Ingredients

3 medium sweet potatoes
2 tsp. salt (for cooking water)
1 Tbsp. butter
1 Tbsp. brown sugar
1 Tbsp. Smoky Pecan Rub & Seasoning
1 can (284 mL) mandarin oranges, well drained
1 cup chopped pecans

Instructions

Wash and peel sweet potatoes and cut into chunks. Bring a large pot of salted water to a boil. Add the potatoes and cook until tender, 25-30 minutes. Drain the potatoes in a colander and shake to remove all water. Place potatoes back in the pot, add butter, brown sugar, Smoky Pecan Rub & Seasoning and oranges; using an electric mixer blend until smooth. Place in a casserole dish, top with chopped pecans and place in a 350°F oven for 15-20 minutes.
